This recipe came from a chef friend of mine and it is very, very impressive. Not only does it looked elegant on the dinner table it is so full of great fresh flavors, you can never go wrong serving this. I love it and would declare it one of my favorite salads of all time. Ingredients:
2 fresh pineapples
2-1/2 cups cut up cooked chicken
3/4 cup diced celery
3/4 cup mayonnaise
2 tablespoons chopped chutney
1 teaspoon curry powder
1 medium banana sliced
1/3cup salted peanuts
1/2 cup flaked coconut
1 can mandarin oranges drained
Directions:
1. Select pineapples with fresh green leaves.
2. Cut each pineapple lengthwise in half through green top then cut in half again making 4 pieces each with part of the green top.
3. Remove fruit by cutting along edges with curved knive.
4. Cut fruit into cubes removing any eyes and fibrous core.
5. Drain pineapple shells cut side down.
6. Combine cubed pineapple, chicken and celery then cover and chill.
7. Mix mayonnaise, chutney and curry powder then cover and chill.
8. Just before serving drain fruit mixture and toss lightly with mayonnaise mixture, banana and peanuts.
9. Fill pineapple shells.
10. Sprinkle with coconut and garnish with mandarain orange segments.
