It’s the baking powder that adds the “fluff.”
Ingredients:
6 eggs (at room temperature)
3 tbsp milk (whole, low-fat, or skim)
1/2 tsp baking powder
1 tsp salt
1/2 tsp black pepper
1 tbsp butter (or cooking spray if desired)
1/2 c cheddar cheese (optional)
Directions:
1. Whisk the first 5 ingredients together and let stand for 5 minutes.
2. Heat the butter in a skillet. Add the cheese to the mixture if using.
3. Whisk the mixture once more and pour the eggs into the heated skillet. Stir constantly until the eggs are creamy. Do not over cook.
