These are the greatest pancakes, so very tasty - a great Saturday morning breakfast!!
Ingredients:
3/4 cup all-purpose flour
1/4 cup cornstarch
2 tablespoons wheat bran or 2 tablespoons oat bran or 2 tablespoons wheat germ
1 tablespoon granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 cup sour milk or 1 cup buttermilk
2 tablespoons vegetable oil
1/2 teaspoon vanilla
fresh berries or fruit
syrup
Directions:
1. Mix together flour, cornstarch, bran, sugar, baking powder, baking soda, and salt in a large bowl.
2. Whisk together eggs, milk, oil and vanilla in small bowl.
3. Stir egg mixture into dry ingredients just until combined.
4. Spray large non-stick skillet with cooking spray. Place over medium-high heat.
5. Spoon about 1/4 cup batter per pancake into pan, spreading better slightly.
6. Cook until bubbles appear on surface, about 2 minutes. Turn and cook until lightly browned on second side, about 1 minute.
7. Serve immediately or keep warm until serving time. Continue with remaining batter.
8. Top with fresh berries or fruit and syrup, if desired.
9. To sour milk, measure 1 tablespoons vinegar into measuring cup; add milk to 1 cup.
10. TIP: For a quick breakfast, prepare pancakes in advance, freeze and reheat in the microwave.
