Fluffy Oven Eggs and Ham

This versitile recipe comes from an insert The Bisquick No Time To Cook Summer Recipe Book in a June 1981 Bon Appetite magazine. You can replace the ham with cooked,crumbled bacon or browned sausage ( regular or spicy) and replace the Swiss cheese with cheddar. Serve with a fruit salad and juice of your choice for an easy brunch.
Ingredients:
1/2 lb smoked ham (fully cooked)
1/2 cup chopped onion
2 tablespoons butter or 2 tablespoons vegetable oil
1/2 cup bisquick baking mix or 1/2 cup similar baking mix
3 eggs
1 1/4 cups milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup shredded swiss cheese
Directions:
1. Heat oven to 375 degrees.
2. Grease 1 1/2 quart round casserole.
3. Cook onions in oil in medium skillet until tender, about 8 minutes.
4. Spread ham and onions in bottom of casserole.
5. Beat baking mix,eggs,milk,salt and pepper with whisk until almost smooth.
6. Slowly pour egg mixture over ham and onions; sprinkle with cheese.
7. Bake uncovered until knife inserted in center comes out clean, about 35 minutes.
8. Remove from oven and serve.
