Fluffy Lemon Buttercream Frosting

Remember those small tart candies called lemon heads ? First tart, then a sweet little ball that melted in your mouth? Re-create these treats with this recipe. The soft frosting is first a punch of lemon, then a relaxed breeze, all the while retaining a gotta-have-another-cupcake texture.
Ingredients:
3 1/2 cups confectioners sugar
1/2 cup of butter (1 stick) softened
1/4 cup of milk
1 t vanilla
1 t lemon zest (the rind of a lemon)
2 t lemon juice
Directions:
1. mix the butter, lemon zest and vanilla together, making sure all the lumps are gone.
2. add the milk, and quickly cream it into the butter mixture.
3. by the 1/2 cup, mix in the sugar.
4. once the sugar is all in the bowl, cream on high for two minutes. (I use this time to clean up)
5. mix in lemon juice.
6. spread heartily on cupcakes, and enjoy!
