Fluffy Cranberry Bits Biscuits

The perfect bit of sweetness but not sweet at all are these delicious biscuits. Authentically Southern with the fluffy awesomeness of butter but with a modest modern twist. Super easy to make and ready in less than 10 steps. Read more . No mixer required and they'll be ready to serve by the time coffee is made.
Ingredients:
2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter (chilled)
2 tablespoons vegetable shortening/i-can't-believe-its-not-butter (chilled)
1 cup milk (chilled)
1 teaspoon sweet cinnamon podwer
1/2 teaspoon bourbon vanilla sugar
3 tablespoon dried cranberry (finely chopped)
Directions:
1. * The key to this whole process is to NOT melt the butter and shortening and NOT turn the whole thing into smooth consistent dough.
2. ** Preheat oven to 450 F.
3. 1. Mix flour, salt, baking powder, baking soda, cinnamon powder, and vanilla sugar in a large bowl.
4. 2. Throw butter and shortening into the dry mix and chop into aproximately 1/4 inch chunks in the flour allowing it to freely get mixed into the whole shabang.
5. 3. Using your fingertips (as quickly as possible) smoosh and mix the butter/shortening chunks with the flour until they're roughly similar sized flakes.
6. 4. Toss in the finely chopped cranberries and toss until evenly mixed (also as quickly as possible)
7. 5. Make a well in the middle of the flour, pour in chilled milk and QUICKLY mix it all together with your hand in a circular motion. The dough should be sticky. Don't over mix it.
8. 6. Using a soft rubber spatula, scrape the dough onto a floured surfce and fold the dough 5-6 times without further MIXING the dough.
9. 7. Press the dough into 1 inch flat sheet and cut into circles with a cup/glass. The top and bottom of the circular dough should not be sticky anymore due to the light powdering of flour.
10. 8. Place the biscuits onto an un-greased baking sheet and bake until risen and golden on top.
11. 9. Pull out of the oven, take off the top and enjoy with a smidge of butter! Oh … watching the butter melt into the biscuit is just heavenly.
