I found this recipe online ( dirt cheap recipes). My husband is a huge chocolate lover, so I thought we would try it. He hates zucchini, so I was a little worried he might not like it. Boy was I wrong, he loves it they are so rich and chocolate you can't taste zucchini at all. Wonderful recipe. Ingredients:
1 cup almond butter |
1 1/2 cups zucchini, grated or very finely chopped |
1/3 cup honey |
1 egg |
1 teaspoon vanilla |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1 cup dark chocolate chips |
Directions:
1. Preheat the oven to 350°F. 2. In a large bowl or mixer combine all the ingredients, mixing well. 3. Pour into a 9 x9 pan that has been sprayed with non-stick spray. 4. Bake at 350F for 35-40 minutes. |
