Ingredients:
eggs
jumbo shrimp (peeled, deveined and uncooked)
flour
bread crumbs
olive oil
rapini
Directions:
1. Beat the eggs. Dip shrimp in the following order: first flour, then egg and finally bread crumbs. Heat olive oil in a frying pan. Fry shrimp for 1 1/2 minutes on each side. Heat oil in another saucepan and add chopped garlic. Cook until golden brown. Add rapini and cook for 5 to 7 minutes. Rapini should be a dark green. Serve with shrimp.
