My Mom found this recipe online and made this when we were trying to make quesadillas and didn't have any tortillas. I wished she doubled the recipe because they were so much better than store bought tortillas. These will freeze well for later, but you might want to double the recipe or you won't have any left to freeze.
Ingredients:
2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon salt
2 teaspoons oil
3/4 cup warm water
Directions:
1. In a large mixing bowl combine flour, baking powder, and salt.
2. Add oil and use your hands to mix.
3. Add the water and work dough into a sticky ball.
4. Let rest for 15 to 30 minutes wrapped in a towel or plastic wrap.
5. Divide dough into balls (size varies depending how large or small you want your tortillas).
6. Heat your cast iron skillet or griddle to medium or medium high.
7. On a well-floured pastry board or counter roll to about 1/8 to 1/4 thick. If the dough is sticky, add a little flour.
8. Cook on each side for less than a minute (brown spots on both sides).
9. Store tortillas inside a damp towel and place in a 200 degree oven to keep warm until ready to serve.
