Flaxseed, Wheat, and Bran Muffins

Ingredients:
1 cup flax seed, ground
1 cup whole wheat flour
1 cup oat bran
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons cinnamon
1 1/2 cups carrots, shredded
2 -3 apples, cored and chopped up or 2 -3 apples, shredded
1/2 cup nuts, chopped (optional)
3/4 cup milk (2%)
2 eggs, beaten
1 teaspoon vanilla
Directions:
1. Mix flour, flaxseed, bran, sugar and dry ingredients together.
2. Shred carrots and apples and add these along with optional nuts to dry ingredients.
3. Mix well.
4. Stir together milk eggs and vanilla and stir this into batter until well moistened.
5. Fill cupcake papers until 3.4 full and bake at 350* for 20 to 25 minutes.
6. ( freeze them in ziplock bag, then just pull one out each morning and will be ready to eat 20 minutes later on the way to work! ).
