Flaxseed Muffins with Raisins and Nuts

muffins w/ flaxseed, oat bran, grated carrots and apple, raisins and nuts (I like pecans)
Ingredients:
1 1/2 cup whole wheat flour (or all-purpose)
3/4 cup (90 g) flaxseed meal
3/4 cup oat bran
1 cup brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 cups grated carrots
2 apples, peeled and grated
1 cup raisins
1/2 cup pecans, chopped (or other nuts)
3/4 cup skim milk
2 eggs, beaten
1 tsp. vanilla
1 tsp. pam (if not using muffin cups)
Directions:
1. Preheat oven to 350 F.
2. Combine flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon. Mix well.
3. Add grated carrots, grated apples, raisins and nuts. Mix well.
4. In a separate bowl, combine eggs, milk and vanilla.
5. Add egg mixture to dry ingredients and mix until just combined.
6. Put batter into prepared muffin cups (either papered or sprayed with Pam).
7. Bake for 15-20 minutes.
