It is simply a way of using up whatever you have left over. Read more . Bubble and Squeak is the name for fried or mashed leftover vegetables from Sunday or any day. Traditionally it would be eaten for breakfast, lunch or dinner with other leftovers. I change it every time I make it. The main component is mashed potatoes which is the starch holding all the other vegetables together.Bubble and Squeak is also known as Bubble or Fry or Mash. In Ireland it is called Colcannon and Rumbledethumps in Scotland. I am assuming it goes back further in history. See other pics inserted for different ways. You can mash it and whip it together or fry it all in a fry pan. Also can be formed into small patties or make balls for appetizers. Spice up or down. Enjoy and have fun.:-)
Ingredients:
leftover mashed potatoes whatever you have or just peel some potatoes and make your own mashed potatoes but if you do don't add any liquids like milk.
plus a tad of imagination.
4 tbsp butter or margarine approx.
1/4 cup onion, finely chopped or grated
any leftover vegetables such as cabbage, turnip, rutabaga, turnips, carrots, peas, brussels sprouts or sweet potato just a few i mention finely chopped. or mashed if you are using the mash whipped method.
salt and freshly ground black pepper to taste. plus any spice you like.
3 tbsp cream cheese approx. (optional but makes it tasty, creamy and smooth) if just mashing or whipping.
fried bacon pieces (optional)
Directions:

2. In a large frying pan melt the butter, add the chopped onion and fry gently for 3 minutes or until soft. Turn the heat up slightly and add the mashed potato and vegetables. Fry for 10 minutes turning over in the melted butter two or three times ensuring the potato and vegetables are thoroughly reheated. Press the potato mixture on to the base of the pan with a spatula and leave to cook for 1 min. or more. Flip over and repeat. Or make little balls. Serve with almost anything eggs, beef, pork, chicken or fish.
3. Mash Method
4. In a fry pan on medium heat add butter or margarine add finely chopped onions and the other veggies of choice when they are tender add leftover potatoes to a pot and mash or whip. You could microwave the potatoes until hot and add it that way and add 3 or 4 tablespoons of cream cheese optional and spiced it up or down. Whip and mash away and serve with whatever your heart desires. Serve with almost anything eggs, beef, pork, chicken or fish.
