Flank Steak Sandwiches

Just meat and cheese on a bun, but so good. You can grill the meat anyway you choose for doneness. We happen to prefer more well done for the sandwiches, but do keep in mind that you will be cooking it again when you place it on the open flat griddle.
Ingredients:
1 1/2 pounds flank steak
1 cup mozzarella cheese
2 tbsp garlic
1/2 cup light mayonnaise
6 french rolls
Directions:
1. Grill flank steak for 5 minutes on one side, then 5 minutes on the other side. Flip meat back onto first side and grill for 3 minutes more minutes, then 3 minutes on the other side. Remove from grill, cover platter with foil and let meat rest for 10 minutes.
2. Meanwhile, mix cheese, mayonnaise, and garlic in a bowl. Set aside.
3. Slice meat into very thin slices against the grain. Place meat on open griddle on fairly high heat, moving it around with two spatulas. When heated thorough, add cheese mixture. Stir until cheese it just melted and incorporated.
4. Fill buns with meat and serve.
