Five Grain Loaf

A friend gave me this recipe, it is a healthy quick bread that is very nice toasted as a snack.
Ingredients:
1 c. 5 grain cereal
1 1/2 c. buttermilk
1 egg
1/4 c. brown sugar
1/4 c. maple syrup (optional)
1/3 c. melted butter
2 c. flour
1/2 c. chopped dried fruit, your choice
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
Directions:
1. Combine cereal and buttermilk. Let stand for 10 minutes. Add egg, sugar, syrup if using and butter. Mix well.
2. Combine dry ingredients. Fold into wet, stir just to combine. Fold in fruit.
3. Spoon into greased 9 x 5 loaf pan, (you can sprinkle the top with demerra sugar before baking for a crust , if you like), bake at 350 degrees 45 minutes or until a cake tester (I use a piece of raw spaghetti) comes out clean.
4. Let cool, slice and enjoy.
