Ingredients:
8 soft corn tortillas
3 (6-ounce) poached cod fillets, flaked
1 teaspoon grated fresh ginger
2 teaspoons fresh lime juice
1 bunch arugula (washed, dried, and chopped)
Directions:
1. Heat oven to 400°F. Wrap the tortillas in aluminum foil and heat in the oven until warm and slightly softened, about 5 minutes.
2. Meanwhile, in a small bowl, combine the cod, ginger, and lime juice and toss. Spoon some of the fish onto a tortilla, then top with some arugula and guacamole, if desired.
