My hubby found this recipe on youtube (strange, but true!). It's not a bad replacement for store bought fish sticks. We are going to try some different types of fish. We've decided cod is the best!
Ingredients:
2 cups cornmeal
1 cup bread crumbs
3/4 cup parmesan cheese
1/2 cup milled flaxseed
3 teaspoons garlic powder
3 teaspoons onion powder
1/2 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
2 whole eggs, beaten
1/2 cup skim milk
2 1/2 pounds cod, cut into 1-inch thick strips
48 oz. flounder, cut into 1-inch thick strips
Directions:
1. Preheat the oven to 475 F. Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside. Combine the cornmeal, flaxseed, cheese, spices, and salt in a medium bowl and mix well. Lightly coat each piece of fish in the beaten egg and milk mixture, then roll in the breading until well coated. Arrange the fish on the prepared baking sheet and bake until golden brown, 10 to 12 minutes.
