Mediterranean style.
Ingredients:
1/2 lb tilapia, cut into pieces
1/2 lb shrimp
1/2 lb scallops
2 tbsp extra virgin olive oil
1 onion, finely chopped
1 stalk celery, chopped
4 cloves garlic, minced
1/4 tsp saffron
1 red bell pepper, roasted and diced
2 cups tomatoes, diced
1/4 grams bay leaves , (1 leaf)
1/4 cup fresh parsley, chopped
1 tsp herbs de provence
1 cup water
1 freshly ground black pepper
1/2 cup whole wheat elbow macaroni
Directions:
1. Heat oil in a sauce pan. Add onions, celery, garlic and peppers and sautee until onions are translucent and vegetable are soft.
2. Add tomatoes, water, and spices. Bring to a boil, then simmer, covered, 5 minutes. Add pasta and simmer, covered, 7 minutes. Add fish and bring to a slow boil for about 3 minutes.
3. Serve sprinkled with fresh parsley.
