Fish Goulash

Ingredients:
1 1/2 cups chopped onions
1 green pepper, chopped
1 garlic clove, pressed
1/4 cup butter
2 tablespoons olive oil
1 tablespoon paprika
1 (15 ounce) can tomatoes
1 bay leaf
1/2 fines herbes
1 teaspoon salt
2 lbs cod fish fillets, cut in large pieces (can use haddock)
chopped parsley
hot mashed potatoes (can use boiled potatoes)
Directions:
1. Saute onion, pepper and garlic in the butter and oil in skillet, about 10 minutes. Sprinkle with paprika and mix well. Add tomatoes, 1 cup water, bay leaf, fines herbes and salt. Bring to a boil and simmer, uncovered 15 minutes or until sauce is slightly thickened. Add fish, cut in large pieces; cover and simmer 15 minutes longer, or until fish flakes easily with a fork. Add more salt if necessary. Sprinkle with parsley and serve with potatoes.
