This is a traditional Indian recipe from the state of Bengal. Fish fillets marinated and crumb fried makes for a delicious snack or an appetizer
Ingredients:
2 by 4 inch fillets of fish (traditionally bekti is the fish used. this is a fresh water fish) - 8
marinade
juice of 1 lemon
cilantro - 1/2 a cup, chopped
vinegar - 2 tsp
garlic paste - 1 tsp
salt to taste
*green chillies - 2, chopped into very small pieces (ref: http://www.freshchannels.com/image/nav/content/fresh_produce/photo/fc_chiligreen2.jpg)
*if these are not available, try a few drops of tabasco
for frying
1 egg
1 cup of breadcrumbs
oil for shallow frying
Directions:
1. wash the fillet thoroughly
2. soak in lemon juice for about 15 minutes
3. discard the juice and rinse out fillets and dry on a paper towel (this helps remove any residual odour)
4. coat fillets in cilantro, chillies, vinegar and garlic and keep in the fridge for 15 minutes or more.
5. spread breadcrumbs evenly on a work surface.
6. Beat egg and keep in a wide bowl
7. Dip each fillet in the egg and coat with breadcrumbs
8. Heat oil till smoking
9. Lower flame and shallow fry till golden brown.
10. Place on a sheet of absorbent paper to remove excess oil
11. Enjoyed best while hot with tartare sauce!!
