A delicious lunch or dinner idea!
Ingredients:
1 tbsp ghee
1/2 cup leek
2 cloves garlic, minced
3/4 cup carrots, thinly sliced
1 cup tomato, chopped
1 cup potatoes, thinly sliced
2 1/2 cup vegetable broth
3 oz. (85g) cod, atlantic, cut into cubes - can be frozen
2 tbsp parsley, chopped
2 tbsp basil, fresh, chopped
1/2 tsp thyme
1/2 tsp oregano
1 pinch salt
1 pinch pepper
Directions:
1. Saute leek and garlic in oil over medium low heat.
2. Add carrots and continue to saute for several minutes.
3. Lower heat. Add broth, tomatoes, potatoes, parsley and spices until vegetables are partially tender, about 5 minutes.
4. Add fish, bring to simmer and cook until fish is just cooked through, about 5 minutes. Do not overcook!
5. Adjust the seasoning and serve.
