Ingredients:

  • 4 large potatoes, peeled and cut into strips
  • 1 tsp salt
  • 1 cup milk
  • 1 egg
  • 1 1/2 lb cod fillets

Directions:

  1. Place potatoes in medium sized bowl of cold water.
  2. In separate medium bowl mix together flour, baking powder, salt and pepper.
  3. Stir in milk and egg until smooth.
  4. Allow mixture to stand for 20 minutes.
  5. Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  6. Fry potatoes in hot oil until tender.
  7. Drain on paper towels.
  8. Dredge fish in the batter, one piece at a time and place in hot oil.
  9. Fry until fish is golden brown.
  10. If necessary, increase heat to maintain the 350 degree F/175 degree C temperature.
  11. Drain fish well on paper towels.
  12. Fry potatoes again for 1 to 2 minutes for added crispness.
