Red pepper, carrot, tomato & carmelized onion frittata
Ingredients:
4 eggs
1/4 cup of red pepper
1/2 onion
1 carrot
1 tomato
2 cloves of garlic
1 teaspoon dill weed
1 teaspoon parsley
1 teaspoon chives
Directions:
1. Saute onions, add garlic. Beat four eggs. Chop all veggies, add seasoning to taste. Combine ingredients, mix. Oven 375 for 23 minutes, or until stiff.
