Firecracker Sesame Chicken

We needed a new chicken recipe - this one came to me in an e-mail from Smithfield, and the boys and I really enjoyed the sweet/spicy flavor.
Ingredients:
1 1/2 lbs chicken breasts, diced
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons canola oil
1 garlic clove, minced
1 cup carrot, sliced into rounds
1 cup snow peas, trimmed
1 red pepper, cut into thin strips
1/3 cup soy sauce
3 tablespoons chili-garlic sauce
1 tablespoon orange marmalade
1 tablespoon sesame oil
1 tablespoon sesame seeds (optional)
1/4 cup diced green onion
2 cups cooked long-grain rice
Directions:
1. Heat canola oil in a large skillet over medium high heat.
2. In a small bowl, whisk together soy sauce, chili garlic sauce, sesame oil, and orange marmalade; set aside.
3. Season chicken with salt and pepper. Add chicken to the skillet and saute until golden brown, about 5 – 7 minutes. Remove chicken from the skillet.
4. Add carrots, snow peas and red pepper to the skillet; saute for about 5 minutes or until vegetables are crisp tender. Add chicken back to.
5. the skillet, along with the garlic; saute for 1 minute. Add sauce to the skillet and cook for another 5 minutes or until sauce is thickened. Serve over white rice.
