Firakh Matbukha Bi I Zabadi - Egyptian Chicken in Yoghurt-Mint S

Ingredients:
1 chicken, whole
10 1/2 ounces yoghurt
1/2 egg white
1/2 tablespoon cornstarch
1/2 cup mint leaf, chopped
salt, to taste
pepper, to taste
Directions:
1. Divide chicken into pieces.
2. Fry chicken pieces until golden brown.
3. Preheat oven to 350 degrees F.
4. Season with salt and pepper and place in a baking pan.
5. Mix yoghurt with egg white and cornstarch until smooth.
6. Pour over chicken pieces.
7. Cover and bake at 350 degrees F for 30 minutes.
8. Finely chop mint leaves and mix into yoghurt after 20 minutes.
9. Serve with vegetables and rice.
