Finnish Pulla Coffee Bread Ring

This authentic, delicious, sweet braided (pulla) coffee bread recipe from Finland.
Ingredients:
2 eggs
2/3 cups sugar (2 dl)
2 cups milk (1/2 l)
1 1/2 oz yeast (50 g)
3 tsp salt
1 tbsp crushed cardamom
1/2 lb butter or margarine (250 g) or 3/4 cup cooking oil (2 dl«0
2 1/4 cup white flour (1 kg)
1/3 cup raisins (1 dl)
egg yolk for glazing
almonds (finely chopped) for decorating
Directions:
1. Get the ingredients for the dough ready. Let them warm up at room temperature for a few hours before you start. This will speed up the rising process.
2. Heat the milk to hand temperature.
3. Beat up the eggs and sugar, add the milk, yeast, salt and cardamom. If oil is to be used, add it at this stage.
4. Add enough of the flour to give a thick, elastic mixture. Beat it vigorously to get air into the dough. This will enhance the glutination of the flour and make the dough rise well.
5. Mix in the rest of the flour and finally the butter and margarine. Knead the dough until it separates completely from your hands and sides of the bowl. If you make the dough with an electric dough mixer, closely follow the instructions for preparing the dough.
6. Cover the dough with a cloth and leave to rise in a warm place. When the dough has doubled in bulk, place on a lightly floured surface and knead well. Add the raisins at this stage, just before sharing the ring.
7. Form the bread by making three (3) long strips of dough and braiding it loosely to form a braided loaf, or a ring if you prefer. Brush the top of the bread with the egg yolk and sprinkle the finely chopped almonds evenly on top. Place on a baking tray and bake at 400 degrees F (200 degrees C) for 30 minutes.
8. NOTE: Bread can be frozen. Enjoy!
