This is the ultimate recipe for a low-sodium, rich, savory, tangy and slightly sweet onion dip.
Ingredients:
2 1/2 tablespoons extra virgin olive oil
1 tablespoon unsalted butter
1 large yellow onion, halved and sliced thin
1/2 teaspoon salt, or more to taste
1 teaspoon black pepper
1 teaspoon dried basil
1 teaspoon paprika
1 teaspoon dried tarragon
1 pinch brown sugar (optional)
1 1/2 ounces fresh goat cheese, crumbled
2 1/2 cups sour cream
Directions:
1. Melt the butter with the olive oil in a shallow skillet over medium heat; cook the onion in the butter and oil until translucent. Season with salt, pepper, basil, paprika, tarragon, and brown sugar. Reduce heat to medium; cook and stir until the onions have softened and caramelized, 10 to 15 minutes. Remove from heat and set aside to cool.
2. Mix the goat cheese and sour cream together in a bowl; stir the onions into the mixture.
