Ingredients:

  • 3/4 cup ( 3 1/2 oz by weight) almond powder
  • 2/3 cup ( 3 1/2 oz by weight) all purpose flour
  • 1 1/3 cups sugar
  • 1/4 tsp vanilla
  • 5 1/4 oz melted butter

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine all ingredients except butter.
  3. Beat for 2 minutes at medium speed.
  4. Gradually pour in the butter while stirring.
  5. Mix well.
  6. Butter tiny molds.
  7. Spoon mixture into molds about 3/4 full.
  8. Bake for 20 minutes or until golden brown.
  9. Unmold while hot. Cool on racks.
  10. Coconut financiers: replace almond powder with coconut flakes
  11. Chocolate financiers: substitute 2 oz cocoa powder to 2 oz flour
  12. *You can use a Madeline Mold or Cupcake if need be*
