These dense cookies are not sweet sweet so don't expect that. But they are healthy, tasty and filling. For variety substitute chopped nuts or dried cranberries for the raisins. If they are too dry for you add a ripe banana to the mix but be careful with all of these ingredients. If you start adding too much and replacing items which real stuff, like sugar or butter you will have defeated the point! Try these in place of Smart for Life cookies.
Ingredients:
1/2 cup margarine spread
1 cup reduced-fat peanut butter
1 1/3 cups splenda brown sugar blend
2 teaspoons vanilla extract
2 large eggs
1/3 cup water or 1/3 cup low-fat milk
1 cup whole wheat pastry flour
1 cup all-purpose flour
2 cups quick-cooking oats
1/2 cup ground flax seeds
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup raisins
Directions:
1. Preheat oven to 350°F In a large bowl mix together margarine, peanut butter, brown sugar and vanilla until creamy, beat in eggs and water. In another bowl mix together flour, oats, flaxseed, salt, cinnamon and baking soda. Add dry mixture to peanut butter mixture. Stir in raisins. Drop by ice cream scoopfulls 2 1/2 inches apart on a cookie sheet lined with nonstick foil. Slightly flattened each mound. THIS is key. Bake 15 to 20 minutes until golden brown and firm. Baking time depends on how moist you liked them. Sprinkle warm cookies with a mixture of cinnamon and Truvia for extra sweetness. Though Truvia is not cheap it is amazing.
