Filipino Chicken Adobo

My mom is from the Philippines so I grew up eating Filipino food. She makes Adobo by memory and has no specific measurements, so this is the closest I could get to creating her recipe. Of course, every family has their own variation to this classic Filipino dish. My mom adds brown sugar to offset the saltiness from the soy sauce. Any type of meat can be used, but chicken has always been my favorite.
Ingredients:
4 chicken drumsticks
4 chicken thighs
1 tablespoon vegetable oil
3 garlic cloves, minced
1/4 cup white onion, chopped
1 cup white vinegar
3/4 cup soy sauce
1/2 teaspoon peppercorn, crushed
2 bay leaves
1 tablespoon brown sugar (more or less depending on your taste preference)
Directions:
1. In a large pot, heat oil over medium high heat.
2. Add garlic and onions to pot, saute.
3. Place chicken in with the garlic and onions and slightly sear the chicken on all sides.
4. Add vinegar, soy sauce, peppercorns, and bay leaves.
5. Cover and allow to cook over medium heat for about half an hour.
6. Add brown sugar and stir well.
7. Replace cover and simmer for 15-20 minutes.
8. Serve over jasmine rice.
