I had just made fresh pitas, and had a few left over. (see pita recipe), We also found some fresh figs at the fruit stand, so I found this recipe and tried it, It was so yummy, I had to post. I'll attach photos soon!
Ingredients:
pita bread - pita bread
figs
garlic (1 clove, cut in half)
extra virgin olive oil
cheese (i used feta since i had it on hand, original recipe calls for goat cheese which would be good too)
honey
thyme leaves (i used fresh from my backyard)
salt & pepper to taste
Directions:
1. Bake or Toast Pitas at 350 degrees until slightly golden brown
2. Brush with Olive Oil while still warm, and rub with cut side of garlic.
3. Rinse, remove steam, and slice (in wedges if you'd like)
4. Add Figs, Cheese, Thyme leaves, Salt & Pepper.
5. Drizzle with Honey & Devour.
