Truly a CAJUN COUNTRY recipe. This recipe came from watching an aunt (who never used measuring utensils) and trying to guesstimate her measurements. Also wonderful for Christmas holiday.
Ingredients:
4 1/4 cups flour
2 cups sugar
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon ginger
2 cups broken pecans
1 -2 cup raisins (optional)
1 -2 cup dates (optional)
1/2 cup dark molasses
3/4 cup milk
1 cup oil
2 eggs
8 ounces orange marmalade or 8 ounces orange rind (thin julienne)
1 quart canned fig, crushed
Directions:
1. Mix all dry ingredients thoroughly.
2. Mix all liquid ingredients thoroughly.
3. Combine and bake.
4. Bake 350 degrees approximately 1 hour.
