This is one of those recipes that I gleaned out of my mothers hand written cookbook - I remember these from my childhood and to this very day love fig newtons....these are just so much tastier!! enjoy
Ingredients:
2 cups figs (chopped)
2 1/2 cups flour
1/4 tsp. salt
1/2 cup sugar (white)
1 tbsp. sugar (brown) (for the fig mixture)
2 tsps. baking powder
1/2 cup brown sugar (for the dough)
3/4 cup butter (soft)
Directions:
1. Pre heat your oven to 400 degrees....if your oven bakes hot reduce to 375 degrees.
2. Chop the figs add the brown sugar - add approximately 1 cup water - allow to come to a boil and turn to low heat - stirring often, allow the mixture to reduce and come to a soft paste. Remove from heat and set to cool.
3. Sift flour, baking powder, salt, mix well, add sugars and cut in your butter make a soft dough. Wrap in plastic wrap and place in the fridge for 30 mins.
4. On a well flour surface take the dough and roll out to 1/2 inch thick cut long strips 3 inches wide.
5. Spread fig mixture in the center and fold the dough over to create a seam - pinch firmly.
6. Bake for 12-15 minutes - check them at 10 minutes for color - this is a eye bake so these are not cookies you can set and forget these have to be watched.
7. When removed from the oven cut into 2 inch cookies. Enjoy!
