Ingredients:
1 egg
1 cup milk
1/4 cup vegetable oil
2 teaspoons anise extract
1 1/4 cups flour
1/2 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 tablespoon anise seed
1/2 cup dried fig, chopped
Directions:
1. Preheat oven to 375 degrees F.
2. Grease muffin tins or line with paper cups.
3. Whisk together egg, milk, oil and anise extract in a large bowl.
4. In a separate bowl combine flours, baking powder, salt, sugar and aniseeds. Stir with a fork. Add dry ingredients to liquid and stir until evenly moistened.
5. Stir in figs and pour into muffin cups. Bake 15 - 20 minutes or until tester comes out clean.
