Fresh figs are the most wonderful treat for me. Alas they are only around for about a month in our area! This cookie using dried figs while not quite as good as a fresh fig, is a glorious substitution. This dough is best baked on a cookie sheet
Ingredients:
1 pound dried figs
6 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons anise extract
1/2 teaspoon salt
6 large eggs
2 cups sugar
2 stick unsalted butter, melted
1 pound walnuts, chopped
Directions:
1. Line a baking sheet with greased waxed paper.
2. Coarse chop the figs.
3. Coarse chop the walnut meats.
4. Combine in a large mixing bowl.
5. Stir in the flour, baking powder, anise extract and salt.
6. In another bowl, beat the eggs and sugar.
7. Add butter and mix well.
8. Combine the egg mixture with the flour mixture.
9. Shape dough into six 2 logs.
10. Refrigerate logs for 30 minutes.
11. Preheat oven to 350 degrees F.
12. Bake logs for 15 minutes.
13. Remove from oven
14. Cool 20 minutes.
15. Reduce oven temperature to 325 degrees F.
16. Slice logs on the diagonal.
17. Return to oven for 10 minutes.
18. Turn cookies.
19. Bake 5 to 10 minutes longer.
