This is a tasty bean dip with ingredients you'll have on hand. Feel free to substitute as you like. Recipe courtesy of Rhonda Cowden, Quincy, Illinois.
Ingredients:
16 ounces sour cream
16 ounces refried beans
4 ounces green chilies (chopped) or 4 ounces jalapenos (chopped)
4 ounces ranch dip (fiesta envelope)
2 cups mexican blend cheese, divided and shredded
olive, sliced
tomato, diced
green onion, sliced
lettuce, shredded
tortilla chips
Directions:
1. In a shallow 1 1/2 quart microwave-safe dish, combine the sour cream, beans, chilies, and dip mix.
2. Stir in 1 cup of cheese. Cover and microwave on high for 2 minutes and stir.
3. Cover and microwave 1 1/2 minutes longer or until heated through.
4. Stir until blended.
5. Sprinkle with remaining cheese and top with olives, tomatoes, onions, and lettuce if desired.
6. Serve with tortilla chips.
7. Recipe tested in 1100 watt microwve.
