Ingredients:

Directions:

  1. Preheat oven to 350°F Lightly spray a 13 X 9 inch baking dish with nonstick spray.
  2. Combine salt, cumin, oregano, chili powder, cayenne pepper and garlic powder in a small bowl. Mix well.
  3. Coat chicken breasts (can be flattened for faster cooking if desired, but will need to alter cooking time) with spice mixture, pressing spices in with fingers.
  4. Place seasoned chicken in baking dish.
  5. Remove the seeds from the bell pepper. Cut the bell pepper and onion into 2-3 inch strips.
  6. Arrange the vegetable strips and olives around chicken. Spoon salsa evenly over veggies.
  7. Bake until chicken is cooked through and juices run clear; ~20-25 minutes.
  8. Serve with tortillas and rice.
