Super quick, easy and inexpensive, as well as delicious. Great for summer, because you don't even have to touch the stove. Has become my signature dish for picnics and parties. my friends demand it. Feel free to add or leave out ingredients as you see fit. I leave out the green chilies, or substitute jalapenos. I also use lime juice instead of lemon and add some salt and pepper to the avocado.
Ingredients:
1 (15 ounce) can refried beans
1 (1 1/4 ounce) envelope taco seasoning
3 medium ripe avocados, halved, seeded and peeled
1 tablespoon lemon juice
1/4 cup sour cream
1 (2 1/4 ounce) can sliced ripe olives, drained
1 (4 ounce) can chopped green chilies, drained
2 medium tomatoes, chopped
6 green onions, sliced
1 cup shredded cheddar cheese
tortilla chips
Directions:
1. Combine beans and taco seasoning in medium-sized bowl; spread onto a round 12-in. serving platter.
2. Mash avocados with lemon juice; spread over beans.
3. Top with sour cream.
4. Sprinkle with tomatoes, chilies, olives, onions, and cheese.
5. Serve with tortilla chips.
