A nummy muffin.
Ingredients:
1 cup hodgson mill multi grain hot cereal
1 cup white flour, unbleached
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
1 cup carrots, shredded
1 cup apples, peeled and chopped
1/2 cup milk
2 large eggs
1/4 cup vegetable oil
1 tsp. vanilla
Directions:
1. Preheat oven to 400F
2. Line 12 muffin cups with paper liners or grease the muffin cups.
3. Blend together dry ingredients.
4. Add remaining ingredients and mix until blended.
5. Batter will be thick; spoon into muffin cups.
6. Bake 20-22 minutes or until golden brown and toothpick comes out clean.
