A muffin recipe off the box of Hodgson Mill Hot Cereal. Surprisingly good. Not too sweet, not overly fiber-y . I shredded the apples, peel and all. The cereal in this recipe has 18 grams of fiber per cup. So, since the nutritional information doesn't reflect the cereal, these muffins have at least 2 grams of fiber per muffin.
Ingredients:
1 cup multi-grain hot cereal
1 cup unbleached white flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1 cup carrot, shredded
1 cup apple, peeled & chopped
1/2 cup milk
2 eggs or 4 egg whites
1/4 cup vegetable oil
1 teaspoon vanilla
1/2 cup pecans, chopped
Directions:
1. Preheat oven to 400*F.
2. Line 12 muffin cups with paper liners or grease muffin cups.
3. Blend together dry ingredients. Add remaining ingredients and mix until blended.
4. Batter will be thick; spoon into muffin cups. Bake 20-22 minutes or until golden brown.
