I don't remember where I got this recipe but it's simple and good.
Ingredients:
1/4 cup butter
1 1/2 cups whipping cream
2 tablespoons vodka
8 ounces smoked chinook salmon, diced
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh dill, chopped
3/4 lb fettuccine pasta
1/2 cup parmesan cheese, grated
Directions:
1. Melt butter gently in a large deep skillet.
2. Add cream.
3. Bring to a boil.
4. Add vodka.
5. Reduce heat and cook on low 3-4 minutes until slightly thickened.
6. Add smoked salmon, salt, pepper and dill.
7. Remove from heat.
8. Cook fettuccine in a large pot of boiling salted water until tender.
9. Drain noodles well.
10. Reheat sauce.
11. Place drained noodles in the pan with the hot sauce.
12. Toss gently over low heat until sauce coats noodles and is thick and creamy.
13. Sprinkle with cheese if desired.
14. Taste and adjust seasoning if necessary.
