Feta Filled Arepas-corn Cakes

Ingredients:
4 cups masa harina ( found in ethnic/ hispanic food sections )
1 tsp baking powder
1/2 cup vegetable oil
3 cups cool water
1 1/2 cups crumbled feta cheese
addtional oil
Directions:
1. In a large bowl mix the masa harina, baking powder, oil and cool water
2. Kneads dough several times and wrap in plastic
3. Divide dough into 16 pieces
4. Faltten each into a 3 inch disc
5. Sprinkle feta over 8 dsics
6. Top with remaining discs and seal to enclose cheese and shape into patties
7. Heat 1/4 inch of oil in skillet and cook arepas med high heat, turning once until golden about 6 to 7 minutes
8. Drain on paper toweling and serve
