Feta and Onion Couscous Salad

Ingredients:

Directions:

  1. Put the couscous into a large bowl and add the lemon juice and olive oil.
  2. Pour in the boiling water, stir, then cover with plastic wrap, and leave for about 10 minutes.
  3. Cook the leek in plenty of boiling salted water until soft. Drain and stir into the couscous with the onion, parsley and mint.
  4. Season to taste with salt and freshly ground black pepper and stir in the feta.
  5. Serve immediately.
