Festive Rice

Aesthetically pleasing rice!
Ingredients:
2 2/3 cups jasmine rice
4 tablespoons oil
2 garlic cloves, crushed
2 onions, sliced
1/2 teaspoon ground turmeric
3 cups water
14 ounces coconut milk
1 lemongrass, stalk
red chile
cucumber, wedges
tomato, chunks
Directions:
1. Rinse jasmine rice thoroughly under cold water in a large strainer.
2. Heat oil in a large frying pan with a lid. Cook the garlic, onion, and turmeric over low heat for 2-3 minutes until the onions have softened. Add the rice and stir well to coat in oil.
3. Pour in the coconut milk and water and add the lemon grass. Bring to a boil and cook gently until all the liquid has been absorbed by the rice, about 12 minutes.
4. Remove pan from heat and leave for 15 minutes.
5. Remove lemongrass stalk and transfer to a serving platter, add garnishes.
