I found this recipe on Obesity Help. I have not tried this recipe, but I'm posting it for safe keeping.
Ingredients:
12 ounces whole wheat penne rigate
1 green bell pepper, chopped
1 red bell pepper, chopped
2 garlic cloves, minced
2 tablespoons olive oil
15 ounces red kidney beans, rinsed and drained
1 teaspoon dried basil
1 teaspoon dried chives
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup parmesan cheese, grated
1 1/2 cups fresh spinach, torn (3oz)
Directions:
1. Prepare pasta according to package directions. Drain and set aside.
2. In a large skillet, sauté the bell peppers and garlic in the olive oil. Stir in beans and cooked pasta. Add basil, chives, salt and pepper; mix well.
3. Remove from heat and stir in the cheese. Add spinach and toss to coat. Serve warm Refrigerate any leftovers.
