My latest batch of muffins for the masses at school - these were packed with apple butter, fresh apples, dried apricots and candied ginger!
Ingredients:
1 cup whole wheat flour
1/2 cup spelt flour
1/4 cup buckwheat flour
2 tsp baking powder
1/2 tbsp baking soda
pinch salt
1 tsp pumpkin pie spice
1/4 cup brown sugar
1 cup unsweetened apple butter
1/4 cup canola oil
1/3 cup water
1 tbsp fresh-grated ginger
1 apple, cored and diced
1/3 cup minced dried apricots
1/3 cup diced candied ginger
Directions:
1. Preheat oven to 400°F, grease or line 12 muffin cups.
2. Whisk together flours, baking powder, baking soda, salt, and spice in a medium bowl, set aside.
3. In a large bowl beat together sugar, apple butter, oil, water and ginger.
4. Add the dry ingredients and stir just to combine, then fold in the apple, apricots and candied ginger.
5. Bake for 22 - 24 minutes, then remove to a wire rack and cool completely.
