This pretty melon colored drink has the true taste of the tropics. From Jane Butel's Hotter Than Hell cookbook, revised edition.
Ingredients:
4 pineapple chunks
1 tablespoon cream of coconut
1 piece gingerroot, fresh, peeled, 2 inches
1 ounce tequila, silver
1 ounce rum, white
1/2 ounce creme de almond
1/2 tablespoon orange juice concentrate, frozen
8 ice cubes
1 cherries, marashino, with stem
Directions:
1. Combine 2 pineapple chunks, cream of coconut, ginger, tequila, rum, creme de almond, orange juice and ice in blender.
2. Process until foamy.
3. Pour into glass, garnish with 2 pineapple chunksa nd maraschino cherry.
