Fennel and Mushroom Salad |

From my recipe files. Ingredients:
3 tablespoons olive oil |
1 garlic clove, minced |
1 tablespoon fresh tarragon |
1/4 cup lemon juice |
8 ounces fresh mushrooms, thinly sliced |
1 fennel bulb, thinly sliced |
1/2 cup grated parmesan cheese |
Directions:
1. Whisk olive oil, garlic, tarragon and lemon juice together in a small bowl. 2. Add the mushrooms and fennel bulb and toss to combine. 3. Serve sprinkled with Parmesan cheese. |
