Feather Light Lemony Yogurt Cake

Okay, so you're looking for a recipe but not as many calories. Well, this cake has all the flavour and none of the guilt! The secret is Yogurt! Top it off with strawberries or any fruit and voila!!!
Ingredients:
1 cup plain nonfat yogurt (i sometimes use vanilla flavoured yogurt - with the f_a_t ;-)
1/4 cup lemon juice (grate zest first)
1-1/3 cups sugar
5 tbsp. plus 1 tsp. (1/3 cup) butter at room temperature
1 tbsp. grated lemon zest (i usually add a dash extra)
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 large eggs plus white of 1 large egg
2-1/4 cups cake flour
Directions:
1. Heat oven to 350ºF.
2. Coat a 12-cup bundt pan with nonstick spray.
3. Mix yogurt and lemon juice in a small bowl until blended.
4. Set aside.
5. In a large bowl, beat sugar, butter, lemon zest, baking powder, baking soda and salt with mixer on medium speed to blend (mixture will resemble damp sand).
6. Beat in eggs and egg white until smooth.
7. On low speed, beat in yogurt, then flour, until just blended.
8. Scrape into pan; smooth top.
9. Bake 30 minutes, or until a wooden pick inserted in cake comes out clean.
10. Cool in pan on wire rack 15 minutes before inverting on rack.
11. Serve warm or cool.
12. Pssst... It's really, really good with fresh whipped cream or extra rich ice cream and fruit on top :-O I just had to toss that atcha ;-)
