MAKES A GREAT COVERED DISH FOR CAMPING OR CHURCH POT LUCK
Ingredients:
6 md diced zucchini, 6 cups
4 tb melted butter divided
2 md diced tomatoes
1 c 4oz shredded cheddar
1 c cubed velveeta
1 c soft bread crumbs
2 beaten eggs
2 tb dried minced onion
1 tb dried parsley
1 ts dried basil
1/2 ts cavenders
1/2 ts garlic powder
1/2 ts salt
1/2 ts pepper
Directions:
1. SAUTE ZUCCHINI IN 2 TB BUTTER UNTIL CRISP-TENDER; DRAIN WELL. IN A BOWL, COMBINE THE REMAINING INGREDIENTS. STIR IN THE ZUCCHINI AND REMAINING BUTTER. TRANSFER TO AN UNGREASED 2-QT BAKING DISH. BAKE, UNCOVERED, AT 350 FOR 25-30 MINUTES OR UNTIL BUBBLY. LET STAND 10 MINUTES BEFORE SERVING.
