Here's a small chocolate cake from Land O Lakes butter. Original recipe says 12 servings, but I think 9 is the maximum for an 8x8 cake!
Ingredients:
1 cup sugar
1/4 cup (1/2 stick) softened butter (land o lakes has half sticks which are great)
1/4 cup sour milk (see note)
1 ounce unsweetened chocolate, melted
1 egg
1 teaspoon vanilla
1 cup flour (all-purpose)
1 tsp baking soda
1/4 tsp salt
1/2 cup boiling water
powdered sugar or whipped cream (optional, for topping)
Directions:
1. Note: For sour milk, use 3/4 tsp white vinegar or lemon juice and add enough milk to make 1/4 cup. Let it stand for 5 minutes before you use it.
2. Preheat oven to 350.
3. Grease and flour 8 inch square baking pan.
4. Cream butter and sugar together in a large bowl, scraping often, at medium speed of your electric mixer until mixture is creamy.
5. Add sour milk, the melted chocolate, egg and vanilla.
6. Beat until smooth.
7. Turn mixer to low speed.
8. Add dry ingredients and beat until well mixed but do not overbeat.
9. Add boiling water and continue beating until smooth.
10. Pour into pan and bake 35 to 40 minutes. A toothpick inserted in the center should come out clean.
11. If you want, serve with a dollop of whipped cream or dusting of powdered sugar.
